so at work we have a shopify store. We already are 5-6 months in on content and now we have to change the domain, I know I need to make re-directs to the new URL, but how do I know where to re-direct from one the URL change happens. is there a way to grab all the pages indexed from the site map somehow?

So long as you are only changing the domain name, the remainder of the URLs should be the same - so one wildcard directive in your .htaccess file should do everything.
