I've encountered a strange issue and I'm wondering if anyone has seen this before.
I noticed one of my articles states it was published in 1999 by someone named Gregory Taylor. After some digging I noticed that I mentioned the 1999 date in the article when talking about the history of a location.
Google pulled the named from an embedded YouTube video and put the uploader as the author.
I do hide the publish dates on my posts. Does Google do this regularly?

No matter what you do - publish date or not, quote some youtube embed author or not, have structured data or not, Google seems to pull the video author name from Youtube and add it in your snippet anyway. The only ways I've managed to get rid of this was either to remove the video entirely or to make my own.
